Austin Hope Paso Robles Cabernet Sauvignon has the telltale confected fruit of the Paso region on the nose, crushed cherry and dried cassis, but the story here is body and finish. Spicy chocolate and coffee notes with a finish of lavender, licorice and mint and power. Some tannin and acidity surround the commotion like rent-a-cops at a biker rally, but they aren’t in control. Saxum is making Paso wines this thick and loud, but they’re making them out of Rhone varieties and they cost a zillion dollars. This is an “it” wine, a true competitor to premium Napa, and it’s a steal, at least for right now.
