Production
Sourcing their Chardonnay grapes from high quality vineyards across South Eastern Australia, once they arrive at the winery they are gently pressed to extract the maximum freshness and flavour. Fermentation of the juice uses a selection of yeast strains that all add complexity and texture to the wines. Employing procedures such as yeast lees, malolactic fermentation and Oak all help to mature the wine into the the popular Chardonnay we can enjoy today.
