Production
This wine is fermented in 50% neutral American oak barrels and 50% in stainless steel tanks. The oak provides hints of vanilla and enhances the mouthfeel and the steel preserves the naturally vibrant fruit flavors inherent in this Chardonnay before being aged.
The barrel fermented portion is aged sur li for 5 months with the barrels stirred monthly enhancing the texture and adding creamy notes to the wine. Of the remaining 50% from the stainless steel portion, half is aged on lees for 5 months with the other half racked clean to preserve the fresh fruit character.
