Production
Donovan hand picks the fruit by night which is then bundled into a chilled grocery fruit lorry and delivered to Zorgvliet winery where he further selects bunches for ���whole bunch and stem�۪ fermentation. The wine then goes through wild yeast fermentation over a 6 month period in old old barrels. The wine is then racked off and settled, mostly into tank, for a further 4 months before being bottled unfined and unfiltered.
