Food pairing
This Pinot Noir pairs exceptionally well with fish such as hake and Robalo (a Chilean fish similar to the Florida red fish), risotto's, white meat or soft cheese such as Brie and Camembert.
Production
The wine is fermented in temperature controlled, open stainless steel tanks with pump overs that gently extract the colour, aromas and tannins. 15% of the wine is then aged in French oak barrels for 10 months while the remaining 85% is aged in stainless steel tanks that allow preservation of the wines fruity characteristics.
