The must is immediately separated from the skins to bring out freshness and fragrance. The wine is then placed in contact with selected yeasts for about 30�ې60 days in pressure tanks at a temperature of 18�C. It is cooled at �ې4�C for 8�ې10 days to stabilize and then filtered and bottled.
