A fantastic celebratory bubbly this also pairs well as an aperitif or with seafood marinara linguini, white meats and any pasta sauce of your choice.
Production
The grapes are pressed and put in stainless steel tank for the first fermentation, under cool temperatures. The wine is fermented using the tank method which enables a secondary fermentation where the bubbles develop, all taking place in a sealed tank rather than in bottle. This means the emphasis is on primary fruit and freshness. After the secondary fermentation the wine is kept on its lees for a few months before a dosage of just under 10 grams per litre of sugar is added giving the wine the final Brut style.
Winery
This is an easy-to-drink sparkling wine made in Burgundy. The grapes are from vineyards in the South of France, with the majority of the blend being comprised of Ugni Blanc and Chenin Blanc. The wine is made by the tank method, giving pristine fruit with freshness and a fine mousse. The style is Brut, with just under 10 grams per litre of residual sugar, and the finish is balanced with lively acidity and appealing stone fruit and apple flavours.
