This chardonnay with its full, broad finish makes it a great accompaniment to braised meets such as lamb shank and pork loin, smoked salmon or a pasta dish with a creamy cajun sauce.
Production
Picking the grapes for this wine during the night preserves their freshness and purity of fruit flavors before being gently destemmed and pressed at the winery. Fermentation of the juice sur lie occurs in a combination of American, Easter European and French oak barrels with less than 10% of the wine undergoing a secondary malolactic fermentation ensures the wine retains its natural acidity. Hand stirring the barrels every two weeks imparts the a rich, creamy texture to the wine and retains optimal flavour.
