    Product Details

    Deep crimson just beginning to display some maturity on the rim. The explosive fruitiness of early youth is now more restrained as the wine begins to settle into maturity but the nose is still driven by impressive focused blackberry and blackcurrant aromas set off by the classic Taylor scent of violets. Full bodied and well structured palate delivering rich blackberry and cassis flavours with spicy, figgy, liquorice flavours evolving on the long and sumptuous finish.

    Most perfect wine and food pairings are closely linked. Chilled native oysters and a crisp, cool Muscadet and a hearty meat ragu with a full bodied Barolo. The flavour profiles of both salty cheese and sweet Port, whilst strong enough to stand up to each other, fall on opposite ends of the taste spectrum, acting as complements, a little like a good marriage! Some good blue, buttery, mellow and slighty piquant cheeses to consider would be: Cashel Blue, Roquefort, Gorgonzola and Saint Agur Blue.
