Production

Grapes are hand-harvested in the early morning, then cooled to preserve the fruit's fresh flavors and natural acidity. Hand-sorted grapes are whole-cluster pressed to avoid bitter tannins. Settled in tanks for a few days the juice is then moved to French oak barrels and stainless steel for fermentation before the final stage of aging.
