A blend of 72% Merlot and 28% Cabernet Franc grapes. Rich and balanced with bold layers of black cherry, raspberry and ripe plum. Sultry notes of cr̬me brule, espresso and dark chocolate extend the finish.
Served brilliantly on its own or with grilled meats.
Production
Grapes were harvested by hand, destemmed, whole berry, cold maceration of 3 days. Inoculated with selective yeast and then allowed to warm up to 28C during primary fermentation with regular punch downs to extract maximum flavor and colour. Pressed and transferred to French oak barrels then goes through MLF and aged for 20 months.
