Food pairing
Best served with classic meat dishes using such as roast chicken, ribs, hamburgers, barbecue, roasted or braised red meats. Joseph Phelps Vineyards is also good with Asian dishes, hearty fish courses like tuna, salmon, mushrooms and pasta.
Production
Grapes were picked at sunrise, sorted and cold soaked prior to fermentation in stainless steel. The wine was aged for eighteen months in 40% new oak barrels (50% French, 50% American) and 60% two-year-old French and American oak barrels before bottling.
