Food pairing
This complex red pairs well with red meat such as tender beef short ribs, game meats such as venison sausages or grilled vegetables in a soy sauce marinade.
Production
The grapes are sorted meticulously at the winery, and fermented in stainless steel open top fermenters with indigenous yeast. The wine is transferred to primarily new French oak Bordelaise and Burgundy barrels and some second use barrels for malolactic fermentation and ageing over 14 months prior to unfined and unfiltered bottling.
