Production
Harvested in thew cool of the night in order to retain the natural acidity and fresh fruit flavours of the grapes, they are immediately destemmed and gently crushed at the winery minimising skin contact. The use of free run juice is a significant factor in the freshness and lightness of the final wine. The juice was cool fermented with specially selected yeasts to preserve the delicate varietal flavours.
