A refreshing wine that is perfect to accompany Thai food, picnics and fresh air.
Muscat Ottonel was the first variety planted at the Hillside farm (1984), and has been a favorite for some 30 years. The grapes were hand harvested, handled gently to preserve its delicate aromatics, the fruit was de-stemmed and given overnight skin contact before draining/pressing off skins and cold settling. The juice was allowed a long slow fermentation in stainless steel. Fermentation ended with a small amount of residual sugar remaining, for an off-dry finish.
Hillside Estate aim to grow the best quality fruit possible, pick at optimum physiological ripeness, ferment cool, and intervene with nature only when necessary_simple, elegant. The temptation to constantly fiddle and improve upon Mother Nature is really more about manufacturing. Natural, beautiful wine is not manufacturedrather, it is carefully guided through natural phases to become the glorious essence of the effects of sun and soil on specific grape varieties.
