A perfect match with roast beef, grilled meats, aged cheeses, smoked eggplant, hearty stews and pastas.
Production
Grapes were de-stemmed after extensive sorting and not crushed to ensure gentle extraction. Whole berry fermentation, punch downs and 30 day extended skin contact were undertaken. Only wine recovered from a light pressing was matured in 50% new and 50% seasoned French oak barrels for 18 months, during which malolactic fermentation took place.
