We achieved an optimum balance of fruit and tannin by utilizing hand punch downs and light pump overs. During fermentation, the wine�۪s flavors and textures are constantly changing. We produced the best Petite Sirah by draining and pressing the wine when fruit complexity is at its peak and tannin extraction is most balanced.
