As with most Malbecs, serve with red meats and cheeses as well as with spicy tomato based pasta dishes.
Production
Hand harvesting the grapes are bought to the estate for destemming. Cold skin maceration lasts for 2 days at 8�C prior to the addition of selected yeasts. Primary fermentation occurs at 23� - 26�C during 15 days before the juice is put through a pneumatic press and further controlled natural malolactic fermentation. Post fermentation the wine is goes through stabilization and filtration before finally being bottled.
