Excellent with roast meats or in sauce, rack of lamb with bacon and thyme flowers, leg of kid with garlic juice. For dessert on a gratin of red fruits.
Production
This wine was aged 12 months in oak barrels. 20% in new wood and 80% in wood of 1, 2 or 3 passages. The harvest is sprained and scraped. After malolactic fermentation in wood, the wine is racked and put in barrels. Bottling is done at the Ch̢teau.
Winery
The name "��dition1912m" is a tribute to the famous Mont Ventoux which stands proudly at 1912 meters above sea level, the last true mountain of the Alps and often called "Giant of Provence".
