Food pairing
Given its fruitiness, Dogajolo can be paired with first courses and white meats, but shows at its best with full-flavored dishes such as roasts, grilled meats, cold cuts and Tuscan regional specialties.
Production
Each varietal is vinified separately in stainless steel in this Sangiovese-based baby Super Tuscan. The blend is briefly aged in oak rendering a medium-bodied red that is soft on the palate with a balanced acidity. Suitable for everyday consumption, Dogajolo is best within a few years of the vintage.
Winery
The name Dogajolo was invented by Carpineto�۪s founders, derived from the Italian word doga, meaning ���stave� ��� the narrow strips of wood used to form oak casks. This is a very innovative product, a young ���Super-Tuscan�, whose characteristics are never found together in the same wine.
