Production
The grapes for this celebrated wine are from 4 exceptional Chenin Blanc vineyards aged between 35 to 47 years old. These low yielding old bush vines are grown in predominately weathered granite soils and are shaped by ocean breezes from nearby Table and False Bay. The sites are especially known to produce powerful wines of exceptional concentration, acidity and balance. The cool climate Cape Town vineyards were hand harvested twice, at different ripeness levels, to add complexity to the fruit expression. The Stellenbosch vineyards were lightly pressed and gently settled that allowed the juice to be fermented with a higher NTU content, producing a powerful and intense palate wine. The Old Vine Chenin Blanc is handled with minimal intervention and undergoes natural formation in 32% new French oak barrels, 30% second fill barrels, 30% Foudre and 8% in terracotta amphora.
